"Roasted parsnip chips
2 parsnips
olive oil
salt and pepper
Preheat the oven to 350. Peel the parsnips and cut off their ends. Then cut the parsnips into thin slices - try and make them all about the same size.
Lay the parsnips on a baking sheet lined with parchment paper. Sprinkle with olive oil, and season with salt and pepper. Roast for about 30 minutes, turning every ten minutes, until golden."
